Best Lemon Sugar Cookie Ever!

Long gone are the days that I make cookies from scratch. Well sometimes, if it's a new recipe I want to try. But here lately, cookie package mixes are just too easy to do and they really yield good cookies!

One of my favorite cookie mixes is Best Choice Sugar Cookie Mix. It's what I call an off brand. It's not Pillsbury or Betty Crocker, etc. But, it is by far the best sugar cookie mix I have found.

Today my plan was to have simple cookies for dessert since the grandkids all love cookies about as well as they like a fancy dessert. And, they're a heck of a lot easier to make, bake and clean up!

I was thinking some lemon cookies would be nice. There is a mix called Meyer Lemon Cookies by Krusteaz that are great, but having none of this on hand, I opted for my old stand by, Best Choice Cookie Mix.

It's just too easy. All you have to do is add a softened stick of butter and an egg to the dry mix. 

Today I decided to try to turn them into lemon cookies. Lemon flavoring would have added extra liquid which I didn't want and I also had some lemon packets of plain powered lemon that we use in tea sometime. It would have been hard to judge how many packets of lemon power to use and it would have also called for extra sugar in an unknown amount.

So, I tried a packet of lemonade drink mix! The packet size that makes 2 quarts of lemonade. The sugar-free kind.

This worked perfect! Just add the dry mix to the cookie dough. It didn't add any extra liquid of course and the cookies remained the perfect consistency. The packet added a perfect lemon taste with no extra calories since it was sugar free.

Start with just a half pack or maybe three-fourths depending on the size of your cookie mix. 

Drop the cookie dough by spoonfuls on to a parchment paper lined cookie sheet and bake at the recommend temperature and time. Don't let them get too brown!
