Keto Blueberry Muffins

A week ago my husband and I started on the keto diet. Two reasons were, he needed to get his A1C down and losing a few pounds for me.

This was a new adventure for both of us. It's been a pretty good week and we've been having some sort of grilled meat, veggies and a salad for the dinner meal.

For breakfast we've been eating eggs, bacon or sausage. Lunch has not been difficult since we really never have a sit down lunch, it's its usually cheese, ham etc.

Yesterday a recipe came out in our local paper and it just sounded so good! Everything was in the pantry except for almond flour and this was picked up at Walmart. It's expensive as compared to regular flour, but you can make goodies out of it.

Blueberry Muffins

1 cup blanched almond flour

2 T Swerve sweetener (didn't know what this was so I used Stevia)

1/2 T baking powder

1/4 tsp salt

5 T heavy cream (used whipping cream)

1 large egg lightly beaten

1/3 c fresh blueberries

Preheat oven to 350. Use a muffin tin with four liners, grease with nonstick cooking spray.

Combine almond flour, sweetener, baking powder and salt. Add cream and beaten egg. Stir until mixed well.

Batter should be thick but should fall off the mixing spoon when lifted up. If too thick, add a bit more cream. Gently fold in blueberries.

Divide batter among 4 muffin liners, filling all the way to the top, smooth top with spatula. Bake until tops are golden about 25 min.

Serves 4: 260 calories per serving and 3.5 net carbs.

My Changes I followed the recipe exactly and didn't have to add extra cream. Five muffin liners were used instead of four. This made the net carbs 2.8.

Baked at 350 but for 20 min instead of 25 since the cups were less full and my oven is a convection oven. Had they cooked a minute or two longer, they would over browned.

Yes, they are Halloween liners right here in February....it's all I had!

They tasted great! We ate them (I'll confess, I ate two!) with a pat of butter and enjoyed every bite.

The leftovers were refrigerated and we will re-warm tomorrow, or maybe tonight served with a little plain Greek yogurt flavored with lemon and vanilla. Yum!
